Garlic Cheddar Biscuits with Gravy

Ingredients:

Biscuits:

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • 1/2 tsp salt

  • 1/2 tsp garlic powder

  • 1/2 cup unsalted butter cold and cubed

  • 1 cup cheddar cheese shredded

  • 3/4 cup milk

Gravy:

  • 1 1/2 to 2 pounds Keller Country pork sausage

  • 6 tablespoons unsalted butter

  • 6 tablespoons all-purpose flour

  • 2 cups whole milk

  • Kosher salt and freshly ground black pepper

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the flour, baking powder, salt, and garlic powder.

  3. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.

  4. Stir in the shredded cheddar cheese, then gradually add the milk until a dough forms.

  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

  6. Bake for 12-15 minutes, or until the biscuits are golden brown.

  7. In a large skillet, cook the sausage over medium heat until cooked through and nicely browned, about 15 to 20 minutes. Transfer the sausage to a platter and set aside.

  8. Add butter into the rendered grease in the skillet, scraping the pan to incorporate any browned bits. Once the butter is melted, whisk in the flour until smooth. Then, whisk in the milk 1 cup at a time, making sure to get any lumps out until the mixture is smooth. Bring to a simmer over medium heat and cook until slightly thickened, about 5 minutes.

  9. Stir the sausage into the gravy. Season generously with salt and pepper. Serve warm.
